- 1 pound potatoes, peeled and grated
- 3 tablespoons olive oil
- 1/2 package Butterball turkey bacon
- Salt and freshly ground black pepper
Using a paper towel, absorb any excess water from potatoes.
In a large skillet over medium-high heat, heat oil and spread potatoes evenly throughout pan. Sprinkle salt and pepper. Cook without moving for 5 minutes, or until golden crispy on the bottom. Then, flip to other side and cook for another 5 minutes, or until golden crispy.
Meanwhile, in a medium nonstick pan over medium heat, cook turkey bacon on each side for 3 minutes.
