- 6 cups water
- Any combination of leftover vegetables, such as romaine hearts, onions, scallions, zucchini, carrots, mushrooms, celery, etc.
- 4 chicken bouillon cubes
- 1/2 cup couscous, quick-cooking polenta or rolled oats
In a large pot, add water, veggies and bouillon cubes. Bring to a bubble and cook for 10-12 minutes. Add couscous, polenta or oats, and thicken, about 2-3 minutes.
Serve with a sprinkle of parmesan cheese on top
