A Nutritious Dinner Menu Your Family Will Actually Want to Eat

Now that the kids are heading back to school, family time is more precious than ever. But if you’re having a hard time thinking of healthy meal ideas that will get the whole family munching happily, we’ve taken all the planning work out of it for you!

Main Dish: Lizzie’s Roasted Chicken

For the main course, we have a crisp and delicious roast chicken flavored with lemon and thyme, served with a slightly spicy green salsa.

Tip: Adjust the salsa to your family’s preference. Or, if half the family likes spicy, and half doesn’t, leave the jalapeno out of half the batch.

Side: Cheesy Cauliflower

Next, we have a brilliant take on cauliflower that couldn’t be easier to prepare, and will have your kids asking for seconds. Just steam a head of cauliflower in chicken stock until soft, mash, and mix in Boursin garlic-and-herb cheese and Parmigiano Reggiano! Like mashed potatoes, but better for you!

Side: Tracy Pollan’s Signature Salad

Michael J. Fox’s wife Tracy Pollan shared this recipe with us, which she makes for her family. This sweet and tangy salad features carmelized walnuts, Bosc pear and shaved parmesan, all atop a bed of mesclun greens, with a balsamic vinaigrette to tie it together. It’s sweet and salty and delicious, and your family is sure to love it as much as Tracy’s does!

Dessert: Giant Skillet Chocolate Chip Cookie

And for dessert, we have a crowd-pleaser that isn’t particularly healthy, but everything in moderation, right? This would be fun to make with the kids in the afternoon, and set aside for dinner. Just wait until you see the look on their face when they see the giant cookie! It couldn’t be easier, since the batter mixes right up in the pan you’re cooking it in.
