It doesn’t get easier than this, folks! This would be a perfect side to toss together right before you sit down to eat. Michael makes a simple red wine vinegar dressing in the bowl, then added chopped fresh dill, toasted walnuts, shaved brussels sprouts and scallions, and tosses it all together. Top with shaved Pecorino and you’re done!

Michael sautees sliced carrots in olive oil and butter, then adds chopped pecans, brown sugar, nutmeg and cinnamon. Finish with lemon juice and parsley – yum!

Tip: Michael uses good quality thinner organic carrots and just washes the skins instead of peeling them!

This simple but delightful side starts with sauteeing broccoli in a hot pan, then adding cream, nutmeg and garlic and letting it cook a bit. Mix in some gruyere cheese, then top with thinly sliced scallions and toasted panko breadcrumbs. Delish!
