Mastering the art of the cheesecake is no easy feat! I mean, how does one get that perfect form?!
Well, when one studio audience member asked “Cake Boss” Buddy Valastro for advice on behalf of his wife (how sweet!), Buddy had two suggestions.
Q: My wife has been trying [to make] a few cheesecakes and they happen to sink or fall. How can we get her cheesecake to stand up?
A: So, two things: I would try lowering the temperature of the oven and baking it longer or putting it in a bain-marie. [To make a bain-marie], take a casserole pan, put water inside and put the cheesecake inside -- which is going to gently help it bake. Sometimes, when you put it directly in the oven, you get that high pop, but it’s not cooked all the way in the middle -- and then [it’s] going to sink. - Buddy Valastro
If that sounds like entirely too much effort to you, though, try Clinton Kelly’s No-Bake Summer Berry Cheesecake!
