Richard Blais’ Nitro Milkshake Creamsicle

For the Orange Sorbet : (or use store-bought)
6 fl. ounces water
5 ounces sugar
2 ounces glucose
1 teaspoon pectin-based ice cream stabilizer
17 fl. ounces orange juice

For the vanilla foam:
1 quart heavy cream
4 ounces sugar
1 tablespoon vanilla extract
2 CO2 charges

If making sorbet, place water, sugar, glucose and stabilizer in a large saucepan. Whisk until well-combined then bring to a full boil. Remove from heat and cool in a refrigerator several hours.

Combine syrup with juice. Check the density, add more water or sugar syrup to adjust. Pour mixture into mixer bowl with wire whisk attachment. Spin with liquid nitrogen until smooth and frozen.

For the vanilla foam, mix all ingredients together until incorporated. Put mixture into Isi canister. Charge twice.

Add candy to vita prep, add liquid nitrogen and pulse until broken.
