Fake-Out Minty Thin Cookies

Serves 24 cookies

2 cups dark chocolate chips
1 teaspoons mint extract
24 butter crackers (such as Ritz crackers)


In a double boiler or microwave, melt chocolate until smooth, stirring occasionally. Once melted, add mint extract.

One by one, using a fork, place a cracker into the chocolate to coat. Shake the cracker while it is still on the fork to remove any excess chocolate and place onto a wax paper-lined sheet tray.

Let crackers sit on the tray in a cool place until the chocolate has hardened.
