- 1 fruit cake
- 2 eggs, beaten
- Butter, for waffle iron
- 1/2 cup dried cherries
- 1/2 cup sugar
- 1 ounce bourbon
- Ice cream, for serving
Preheat waffle iron on the medium setting.
In a food processor, process fruit cake to fine crumbs. In a mixing bowl, combine the crumbs with the eggs and stir until it comes together. Portion the dough into 4 sections and roll each into a ball.
Brush the heated waffle iron with butter and place a ball into each square of the waffle iron. Close and cook on medium heat for 3-4 minutes, or until crispy and brown. Repeat with the remaining dough balls.
While the waffles cook, in a saucepot over medium high heat, combine the cherries, sugar, bourbon and just cover with water. Once the mixture comes to a boil, reduce to a simmer and thicken, about 3-4 minutes.
Serve fruit cake waffles topped with one scoop of ice cream and cherry sauce.
