Hudson’s Good Morning Juice

Serves 4

4 Granny Smith apples, quartered
4 Pink Lady apples, quartered
5 celery stalks, cut into 4 pieces each
2 cups loosely packed spinach leaves
1 cup loosely packed fresh mint leaves
3 tablespoons fresh lime juice
1 2-inch piece fresh ginger, peeled
Ice cubes, optional


With motor running, feed all the ingredients except the ice into a juicer, catching the juices in a bowl.

Fill four glasses with the ice cubes, if desired, pour the juice over the icem, and enjoy immediately.
