Ted Allen’s Compound Butter

Serves 2 sticks

2 sticks unsalted butter, fully softened to room temp
2 teaspoons fresh thyme leaves
1 teaspoon finely minced garlic
1/2 teaspoon Kosher salt


Whip all ingredients in a stand mixer with whisk attachment until well blended and fluffy. Spoon into 1/4-cup ramekins or roll up in waxed paper to chill and slice into coins for topping steaks.

You can also use chipotle powder or minced chipotles in adobo; rosemary; red pepper flakes; tarragon; toasted curry powder or cardamom—the options are limitless!
