Grant’s Peanut Butter Bunny Cups

Serves 4

4 hollow chocolate bunnies
1 cup heavy whipping cream
1/2 cup creamy peanut butter
2 tablespoons confectioners’ sugar
1/4 teaspoon salt


Using a warm knife, cut the top half of the bunny’s head off. Remove and set aside.

Place whipping cream and peanut butter into a stand mixer. Whip until it starts to stiffen up. Add confectioners’ sugar and salt. Whip again to incorporate and until peanut butter mixture has a mousse-like consistency. Place the mixture into a piping bag or plastic bag and snip off the end.

Pipe the peanut butter mousse into the body of the bunny. Place the reserved ears back on top and eat!
