Serves about 1/4 cup
1 jar peanut butter, with a couple tablespoons left in the bottom
2 tablespoons Tamari
1 tablespoon rice wine vinegar
1 inch grated ginger
1 garlic clove
2 tablespoons sesame oil
Hot water

Add all of the ingredients to the peanut butter jar, replace the lid and shake until combined. Toss with sesame seeds, scallions and cold buckwheat or whole wheat noodles.
