Ingredients

  • 2 cups shredded leafy green lettuce
  • 1 tablespoon plus 1 teaspoon extra-virgin olive oil
  • 1 teaspoon apple cider vinegar
  • Salt and freshly ground black pepper
  • 1/2 large unsliced* pizza, crust removed
  • 4 ounces buffalo chicken deli meat, thinly sliced
  • 4 ounces provolone cheese, thinly sliced
  • 4 ounces Genoa salami, thinly sliced, then gently chopped

Preparation

In a small bowl, toss lettuce with 1 teaspoon of the olive oil and apple cider vinegar. Sprinkle with a pinch of salt and a grind or two of pepper. Toss to combine.

Brush remaining tablespoon of oil on a griddle (cast iron is great!) and turn to medium-high. Trim and cut leftover pizza into four 4x4 squares (this is all about leftovers, so use what you have to get what you want. Cant make them 4 squares? Smaller is ok). Place each piece of pizza, crust side down, on the griddle. Begin to layer the slices equally with first the buffalo chicken slices, then a layer of provolone and finally the salami. Toast hero halves until cheese begins to melt. Remove all to a cutting board and top half of the squares with reserved lettuce. Top each of those slices with the other toasted hero halves, topping side facing down to create a sandwich. Secure each half with toothpicks and cut in half using a serrated knife. Serve warm or wrap and serve cold.

If you are ordering out, ask them to leave your pizza un-sliced. It stays warmer that way anyway. If using leftover pizza that is already sliced, simply follow the same directions and make triangle shaped heroes and cut in cool angels, kids like stuff like that adults too.
