• 1 almost-gone jar salsa verde (only a couple tablespoons left)
  • 1/2 red onion, finely diced
  • 2 tablespoons cilantro, chopped
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • Salt and pepper

Combine all ingredients in the salsa jar, screw the top back on and shake to combine.

Toss with your favorite salad greens and serve.
