Roses Sweet & Spicy Pork Chops with Spice Rub and Glaze

Serves 4
For the spice rub:
3 tablespoons Kosher salt
3 tablespoons peppercorns
2 tablespoons brown sugar
1 1/2 tablespoons mustard seed
1 1/2 tablespoons sweet paprika
2 teaspoons fennel seed
2 teaspoons oregano
1 1/2 teaspoons celery seed
1 teaspoons thyme
1 teaspoons cumin seed
I teaspoons onion powder
4 bone-in pork chops
For the glaze:
1/2 cup ketchup
1/4 cup cider vinegar
1/4 cup brown sugar
2 tablespoons spice rub

Place spice rub ingredients in blender and pulse until coarsely ground.

Rub pork chops liberally on both sides with the rub. Store extras in an airtight container for later use.

Preheat grill to high and sear chops on both sides, 2-3 mins per side. Meanwhile, mix glaze in saucepan on medium heat. Adjust seasonings to your taste.

Turn grill to med-low and continue cooking until internal temp is 150F (depending on thickness of chops). Baste with glaze during last 2 minutes of cooking. Let rest 5 minutes before serving.
