Ingredients

  • Ground turkey
  • Homemade or store bought whole wheat dough
  • 1 can of chickpeas
  • 1 cup Cashews- unsalted
  • 2 to 3 lemons
  • 1 tablespoon parsley
  • 1 tablespoon cilantro
  • 1-2 cloves garlic
  • Thin sliced pickles
1 teaspoon chili paste: Siracha or Sambal Jelek
  • 1 teaspoon chili paste (Sriracha or Sambal Oelek)
  • 1 to 2 tablespoons tahini
  • 2 tablespoons EVOO- Extra Virgin Olive Oil
  • 1/2 teaspoon turmeric
  • Paprika
  • Salt
  • Pepper

Preparation

 

 

For the turkey patties: Preheat oven to 350F. In a bowl, mix ground turkey meat with turmeric, cumin, salt, pepper and paprika. Form small turkey burgers by taking ground turkey the size of a golf ball and flattening into a round patty. Place patties on frying pan with a little oil and cook each side for 3 to 5 minutes. Finish each patty in the oven to cook to desired wellness.

 

 

For the Chili Garlic Hummus: Combine chickpeas, garlic cloves, tahini, cilantro, parsley, chili paste, juice from 1 lemon, and salt and pepper, blend in a food processor. Slowly add EVOO until you reach a smooth consistency. Add salt, pepper and chili paste to your liking.

 

 

For the Homemade Cashew Cheese: Soak cashews overnight in water. Put cashews, juice from 1 lemon and salt. Blend until smooth. Add oil or water to smooth if necessary. Let mixture process for 5+ minutes.

 

 

For the Whole Wheat Pita: Preheat pan or stove top to medium/ medium high heat. Roll wheat dough to 1/4 inch thickness. Cut circles of cookie dough using round cookie cutter 2-3 inches in diameter. Place dough on ungreased pan and cook on both sides until slightly brown. Let sit to steam for a minute, assemble burgers and enjoy deliciousness.
