Crispy Broiled Greens

Serves Serve 4 to 6
1 large or 2 medium bundles black kale, dinosaur kale or Tuscan kale, cleaned and stemmed, leaves very coarsely chopped
EVOO Extra Virgin Olive Oil, for drizzling
Salt and pepper
Freshly grated nutmeg

Preheat broiler to high. Place oven rack in upper third of oven. Set a cooling rack over a baking sheet and arrange half the kale on it. Drizzle the greens with EVOO and season with salt, pepper, and a little nutmeg.

Broil the greens until crispy at edges, 3-4 minutes. Remove to a platter and repeat with the remaining greens.

Top greens with Italian Chicken Drummers or serve as a simple and nutritious side to any meal.
