• 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons EVOO Extra Virgin Olive Oil
  • Salt and ground black pepper
  • 5 to 6 carrots, peeled and cut into chunks

Preheat oven to 375F.

In a small bowl, stir together the soy sauce, honey, EVOO, some salt and pepper.

Put the carrots into a casserole dish and toss them with the honey-soy mixture. Roast, turning occasionally, until tender, about 30 minutes. Serve warm.
