Tomato-Lime Salsa

Serves Makes 2 1/2 cups
1 red chile pepper, such as Fresno, seeded and finely chopped
1 green hot chile pepper, such as Serrano or jalapeno, seeded and finely chopped
1 medium red onion, finely chopped
3 to 4 ripe tomatoes, seeded and chopped (2 cups)
2 limes
Salt, to taste
A generous handful of cilantro, finely chopped, about 1/4 cup
A small handful of mint, very finely chopped, a couple of tablespoons

Combine ingredients using zest of 1 lime and juice of 2, adjust the salt to your taste.
