• 8 large baking potatoes
  • 5 large sweet potatoes
  • EVOO - Extra Virgin Olive Oil, for drizzling
  • Salt

Preheat oven 400F.

Place the potatoes on a baking sheet and drizzle with some EVOO. Prick with fork, sprinkle with some salt and bake in oven for 40 minutes, until the potatoes are cooked through and tender.

You will need four of the baking potatoes for tonights dinner: Scallops Newburg-Stuffed Potatoes. Let the other potatoes cool completely and store them in the refrigerator for Night Twos Corned Beef Hash-Stuffed Potatoes with Eggs and Night Threes Turkey Kielbasa, Sweet Potato and Leek Soup.
