- 1 whole chicken, cut into 8 pieces
Salt and freshly ground pepper
3 cups flour
2 tablespoons onion powder
2 tablespoons garlic powder
1 quart milk
Salt and pepper the chicken pieces generously. Mix the flour and onion and garlic powders together. Dip the chicken in the milk then dredge through the flour mixture to coat well.
Heat 2 inches of canola oil in a skillet to 350ºF. Drop the chicken, in small batches, into the oil. It’s important not to add more than one piece of chicken to the pan every couple of minutes. The first piece will brown a good bit faster so add larger pieces first and then the smaller ones. Fry, covered, for 10-12 minutes. Turn pieces over and cook for an additional 8 minutes. Place on paper towels to drain and salt immediately.
