Sunny Anderson's 2-Ingredient Potatoes

Serves 4-6 servings
1 pound baby potatoes
Zest and juice of 1 lemon

(Pantry items: extra-virgin olive oil, salt and pepper) 

Bring a large pot of salted water to a boil. Once boiling, add potatoes and cook until tender and then drain. 

Toss potatoes in a bowl with lemon zest and juice. Season with salt and pepper.
