If your kids gobble down the main dish but turn up their nose at a side of veggies, we’ve got 7 creative ways to get them to gorge on veggies, possibly without even realizing it!

No. 1: Michael Chernow's Spaghetti Squash with Chicken Meatballs

If your kids love spaghetti and meatballs, try swapping your usual recipe for this lightened up version. Just roast a spaghetti squash, shred the insides with a fork, and serve with chicken meatballs and marinara!

No. 2: Meat Sauce Over Roasted Green Beans

Bob Harper’s dish will have your kids asking for green beans! He just roasts green beans in the oven and tops with meat sauce – it doesn’t get easier than that!

No. 3: Cookie Monster’s Sausage and Zucchini Strata

Cookie Monster visited Rach to show her how to make one of his favorite healthy recipes, a whole wheat, cheese and zucchini strata. The kids will never know how much healthy zucchini they’re eating!

No. 4: Spaghetti with Bacon and Cabbage

It’s hard to imagine who wouldn’t like bacon with their spaghetti, and the cabbage comes along for the ride!

No. 5: Macaroni and Cheese Primavera

This mac and cheese primavera packs a ton of veggies into a healthy treat that the whole family will want to chow down on.

No. 6: Black Bean and Butternut Chili

This main dish packs a double punch of two extremely healthy ingredients – black bean and butternut squash! Serve with cheese and sour cream and the kids will literally eat this up.

No. 7: Pasta with Ricotta and Peas

This vibrant green of this dish and the brightness of the lemon flavor will reinforce that spring has arrived. It’s a great dish to throw together after a busy workday, and the rich, creamy Ricotta sauce will win over every member of the family. Bonus – it has shell-shaped pasta which kids love!
