Fall has arrived! Now’s the time to get out your favorite heavy-bottomed pot and cook up a big batch of warm and comforting stew! From vegetable stews, to Mexican stews, to good old beef and potatoes stews, we’ve got something for every taste!

No. 1: Roasted Vegetable Stew One-Pot

This multi-layered vegetable stew one-pot is packed with nutrients but has such a deep, rich flavor that your family will forget it’s good for them. The vegetables slow cook in a Dutch oven, and then the stew is topped with Rachael’s secret weapon: garlic bread breadcrumbs! Oh my!

No. 2: Portuguese Stew

This boldly flavored but lighter stew is served with toasted bread slathered with homemade Romesco sauce. It’s hard to imagine how a meal could get more comforting than this!

No. 3: Zesty Green Bean Stew

Potatoes browned with spices for the backbone of this delectable and light veggie stew. Perfect way to eat well when you’re watching your weight, or to get your kids to eat their veggies!

No. 4: Pork Stew with Ancho Chiles and Squash

This healthy and nutritious Mexican style stew is just bursting with rich chile flavor. Rach uses ancho chiles, and describes them as tasting like “sweet smoky raisins.”

No. 5: Irish Stew

This traditional and simple stew features large chunks of potato, onions and carrots and either lamb or beef chuck, with peas added at the end. Simple perfection.

No. 6: Cacciatore-Style Boneless Chicken One-Pot with Green Beans

This dish has something for everyone: chicken, cremini mushrooms, Parmigiano-Reggiano cheese and San Marzano tomatoes, just to name a few ingredients. It's enough to satisfy any cravings. (Oh, and it tastes incredibly good.)

No. 7: Chorizo-Zucchini Posole with Chipotle

Rachael compares her take on the traditional Mexican stew posole to a healthy version of nachos, because she plates up homemade tortilla strips, shredded cheese, radishes, avocado, and pours a rich, spicy chicken and zucchini soup over it.
