With the weather getting cooler (for most of the country) and the kids headed back to school, September was all about rich and comforting meals. And the No. 1 recipe of the month? A nacho casserole that is perfect for game day, or any day really! Rachael “tiles” her chips, smoky chipotle chicken, and cheese so that the ingredients are well distributed, heats, and then tops with salsa, jalapenos and sour cream. Nothing wrong with any of that!

Tip: Make your life easier by using a pre-cooked supermarket rotisserie chicken!
