With the weather getting cooler (for most of the country) and the kids headed back to school, September was all about rich and comforting meals. From a queso dip mac ‘n cheese, to a shepherd’s pie, to a cheesy chicken and pepperoni dish, read on to see which recipes our readers loved most this month!

No. 10: Queso Dip Mac 'n Cheese

Coming in at No. 10, we have a mac and cheese that features all the flavors of queso dip! Yes, please!! And you can even eat it with tortilla chips! Amazing!

No. 9: Emeril Lagasse’s Barbacoa Tacos

Emeril’s delish tacos are a different way to use a chuck roast, if you’re not feeling stew or pot roast. The meat is slow cooked until it is so tender that it falls apart, then served up with salsa, cream and avocados on tortillas. Yum!

No. 8: Grilled Chicken and Corn Salad with Chipotle Crema

Rach makes her own delish spicy dressing for this fresh and delightful salad. It doesn’t get better than this when it comes to an easy weeknight dinner.

This boldly flavored but not-too-heavy stew is served with toasted bread slathered with homemade Romesco sauce. It’s easy to see why our readers would love a comforting meal like this!

This hugely flavorful burger is one you don’t have to feel guilty about, since it’s made with turkey and also features nutrient-dense avocado!

No. 4: Ground Turkey Ragu with Tagliatelle

This quick and easy homestyle dish is the perfect hearty option for a fall evening. The thick tagliatelle pairs perfectly with a flavorful turkey ragu.

No. 3: Prosciutto-Wrapped Chicken with Garlic and Herb Cheese

This delicious dinner only features five ingredients! Rach stuffs chicken breast with Boursin garlic and herb cheese, then wraps in prosciutto and pan cooks. When the chicken is cooked through, she removes to a serving platter and wilts spinach in the same pan she cooked the chicken in! Brilliant!

No. 2: Chicken Pepperoni

This decadent dish is actually a pretty healthy meal option for the family. Rach starts with a tomato-based sauce with red wine and pepperoni, adds pre-cooked chicken breast, then tops with mozzarella and throws it under the broiler. This is sure to warm you up on a cold and rainy fall night!

No. 1: Chipotle Chicken Nacho Casserole

And the No. 1 recipe of the month? A nacho casserole that is perfect for game day, or any day really! Rachael “tiles” her chips, smoky chipotle chicken, and cheese so that the ingredients are well distributed, heats, and then tops with salsa, jalapenos and sour cream. Nothing wrong with any of that!

Tip: Make your life easier by using a pre-cooked supermarket rotisserie chicken!
