Who doesn’t love nachos? Rachael “tiles” her chips, smoky chipotle chicken, and cheese so that the ingredients are well distributed, heats, and then tops with salsa, jalapenos and sour cream. Nothing wrong with any of that!

Tip: Make your life easier and give yourself more time to watch the games by using a pre-cooked supermarket rotisserie chicken!

No. 2: Chicken Pepperoni

Rach simmers chicken breasts in a skillet with tomato sauce, pepperoni and basil, then covers with mozzarella and finishes under the broiler. Delish!

No. 3: Garlic-Bread Chicken Nuggets with Balsamic Ketchup

Rach sets these nuggets apart by using crunchy panko breadcrumbs that are seasoned with granulated garlic, oregano, flat leaf parsley, and Parmigiano-Reggiano for a garlic-bread flavored crust. She uses halved chicken breast tenders, which are figure-friendly as well as easy to cut because they already come in small pieces! She breads, then fries in a shallow pan – easy-peasy!

Katie Lee’s chicken paillard is quick to make, delicious to eat, and figure friendly! She pounds her chicken thin, and seasons when salt, pepper and garlic powder. She grills, then serves with an arugula salad topped with shaved pecorino cheese. Easy peasy.

This simple, savory dish is easy to prepare but delivers big on flavor. It’s the perfect meal to pull out of your back pocket when you’re low on supplies but still want a yummy dinner.
