Rachael uses Gorgonzola Dolce, a sweet, mild blue cheese, as well as Parmigiano-Reggiano, lemon zest and sage in these flavor-packed veal meatballs. She roasts the meatballs for the “less guilt” factor.

This family recipe from Rocco starts with a equal parts beef, pork and veal. What sets this recipe apart, however, is that Rocco’s “Mama” would make paste of chicken stock, parsley, garlic and onions, which would really get the flavor and moisture throughout the meatballs.

And for a different spin on a meatball dish, check out the stars of Cooking Channel's Pizza Cuz as they make their meatball rolls. They start with meatballs made with veal, pork, Pecorino cheese and other delicious ingredients.
