Clodagh rubs a whole roasting chicken (over and under the skin) with a butter infused with tarragon, honey and Dijon mustard – yum! She then takes some reserved melted infused butter and pours it over a baking sheet of peeled parsnips. Next, she puts the bird on top with a few additional sprigs of tarragon, and roasts it all together! So easy but so delicious!

For this roast, Clodagh inserts rosemary and garlic right into the meat. She cooks it over a bed of diced potatoes and diced celeriac (celery root) tossed with olive oil, rosemary and salt and pepper. Yum!

First, Clodagh makes her own breading from homemade breadcrumbs, herbs, Dijon mustard, shallots and garlic. Then she prepares a tray of peeled butternut squash or sweet potatoes cut into long wedges, and drizzles with olive oil. Finally, she dredges pork chops in flour, an egg wash, and the breadcrumbs, then sets them atop the vegetables and put them right into the oven. Yum!
