- 3 to 4 medium eggplants, cubed
- 2 pints cherry tomatoes
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Extra virgin olive oil spray
Preheat oven to 400°F.
On a sheet tray, add the eggplant, tomatoes, spices, salt and pepper. Spray with EVOO spray for 7-15 seconds and toss to coat. Roast in the oven until veggies are very tender and dark, tossing every 15-20 minutes.
Serve alongside a grilled steak or chicken breasts.
