The grill isn't just for meat and veggies! Former staffer Grant Melton grills marinated peaches and tops them with whipped cream, honey + almonds. Delish!

Ingredients

  • 4 peaches, halved and pitted
  • 1/4 cup olive oil
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 2 sprigs mint
  • Juice and zest of 1 lemon
  • Whipped cream, for serving
  • Honey, for serving
  • Sliced almonds, for serving

Yield

Serves: 4

Preparation

In a large zip-top bag, place the peaches, olive oil, sugar, salt, cinnamon, mint, lemon juice and zest. Marinate peaches for 1 hour or overnight.

Heat a grill to high. Once the grill is very hot, place the peaches flat-side down and cook until the peach begins to char. Remove peaches to a plate, flat-side up.

Top each peach with whipped cream, a drizzle of honey and some almonds.
