• 4 ears fresh corn on the cob, shucked and kernels removed
  • 1 cup grape tomatoes, halved
  • 1 small red onion, finely chopped
  • 1 handful fresh parsley, stemmed and chopped
  • 1 bunch (5 to 6) radishes, thinly sliced
  • Zest and juice of 1 lime
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper, to taste
  • Hot sauce, to taste (optional)

In a large mixing bowl, combine corn kernels, tomatoes, red onion, parsley, radishes, lime zest and juice, olive oil, salt, pepper and hot sauce.
