Grant’s Pimento Cheese Hot Dogs

3/4 cup mayonnaise
1/2 jar pimento peppers, chopped 
4 pickled jalapeño slices, chopped
1 teaspoon white wine or white balsamic vinegar
1 teaspoon yellow mustard
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1 cup mild yellow cheddar, grated 
1 cup sharp white cheddar, grated
A handful chives, finely chopped
6 hot dogs, grilled
6 hot dog buns
Butter lettuce, for serving
Fried onions, for topping


Place the mayo, pimento peppers, jalapeños, vinegar, mustard, paprika, salt and cayenne into the bowl of a stand mixer fitted with the paddle attachment. Turn the mixer on low and mix until just combined. With the mixer running, add in the cheese and chives. Once combined, turn off the mixer and remove the pimento cheese to a bowl.

To build a dog, place a leaf of lettuce down into each hot dog bun and top with a dog. Place a few spoonfuls of pimento cheese and some crunchy fried onions over the dogs and serve.
