This vegetarian summer dinner option is simple to prepare but boasts a complex flavor. If you want to up the protein quotient, you can add chicken or another meat.

No. 3: Jeanette's No-Cook Italian Salad

This fresh, delicious and nutritious salad features couscous, salami, mozzarella, spinach, zucchini and more delightful ingredients.

No. 4: Marc Murphy's Zucchini, Pecorino, and Mint Salad

This creative salad features zucchini cut into spaghetti-like strands tossed with a dressing of olive oil, lemon and mint and topped with shaved pecorino.

No. 5: Graham Elliott’s Shaved Broccoli Salad
