We’re celebrating Rach’s birthday this week by revealing some of our favorite recipes. Today – it’s all about the spice factor, as we count down her best buffalo recipes with a few fiery surprises thrown in.

No. 1: Buffalo Steaks with Braised Celery, Carrots and Parsnips

Who says you can’t give steak the buffalo treatment? Rach tops a juicy rib-eye, flat-iron or strip steak with a spicy red sauce and crumbled blue cheese. Braised celery and parsnips make for an elevated garnish.

No. 2: Buttermilk-and-Blue Waffles with Buffalo Whiskey Crispy Chicken

Blue Cheese Waffles topped with spicy fried chicken and coated with a hot buffalo whiskey sauce? Yes, please! Rach keeps it easy to munch by using boneless skinless thighs or breasts.

No. 3: Buffalo Burgers

Let’s call these burgers buffalo squared – they feature a buffalo sauce and are also made from buffalo meat. They deliver a kick and will satisfy a taste for something different.

No. 4: Hot Chicken Sandwiches With Pickles 'n Slaw

Spicy fried “hot chicken” is everywhere these days – now you can make it at home! For this recipe, Rach fries chicken with a crisp and delicious breading, and then bastes with a buttery, peppery hot sauce.

No. 5: Buffalo Chicken Chili

We can’t get over this chili that tastes like buffalo wings. And it’s certainly easier and neater to eat while watching the game!

No. 6: Buffalo Joes with Blue Cheese and Carrot-Celery Slaw Relish

These buffalo “Joes” feature all the flavors of wings with a Sloppy Joe delivery. Yum!

No. 7: Buffalo Turkey Chili-Stuffed Baked Potato Skins

For these decadent but nutritious potato skins, buffalo turkey chili is stuffed into twice-baked potato skins and topped with melted cheese – yum!

No. 8: Harissa Chicken

This spicy chicken is cooked under a brick in a cast iron skillet for maximum char effect. Rach’s smoky harissa sauce is great as a marinade, but can also be in countless other ways to up the spice factor of a dish.

No. 9: Turkey Poppers Rellenos

This unique indulgence is a combo of chile rellenos and jalapeno poppers that features chiles stuffed with mashed potatoes, then topped with turkey, gravy and cheese. Delish!
