Grant’s 2-Ingredient Crepes

Serves 4-6

1 cup self-rising flour
1 12-ounce can sparkling water or seltzer


Place the flour into a large bowl and slowly whisk the water into the flour. Stir until the foam dissipates and the batter is smooth, about 30 seconds.

Heat a good-quality, nonstick pan over high heat until hot. Add 1/3 cup of the batter to the pan and, using a rubber spatula, quickly spread the batter to the sides of the pan. Let the batter cook for about 2 minutes or until the top begins to dry out and the edges start to pull away from the pan. Using your fingers or a rubber spatula, quickly flip the crepe and cook for another 30 seconds.

Stack the crepes between pieces of wax paper as you finish them so they don’t stick together.

Fill them with fresh fruit, jam, ricotta cheese, sautéed apples or chocolate hazelnut spread!
