Clinton Kelly's Loaded Sweet Potato

Serves 2 loaded sweet potatoes

2 sweet potatoes, baked until very tender and slit along the top
1/2 cup Greek yogurt
Zest and juice of 1/2 lemon
1/2 teaspoon cumin
1 pinch red pepper flakes
Salt and pepper, to taste


Bake sweet potatoes until very tender then cut a slit along the top.

In a small mixing bowl, combine yogurt, lemon zest and juice, cumin, red pepper flakes, some salt and pepper. Top each potato with half the mixture.
