- 1 cup sugar
- 4 sticks unsalted butter, softened
- 2 eggs
- 1 tablespoon vanilla
- 1 1/2 cups chopped pecans
- 2 1/2 cups crushed potato chips (we usually use Lays)
- 3 1/2 cups oat flour
Serves: 4 dozen cookies, fine to halve
Preheat oven to 350°F.
Cream softened butter and sugar in a stand mixer. Add vanilla then gradually add in flour. Stir in nuts and chips.
Drop by the teaspoon onto nonstick cookie sheet and bake for 14 minutes. Let cool for 7 minutes.
