Potato Chip Cookies

Serves 4 dozen cookies, fine to halve

1 cup sugar
4 sticks unsalted butter, softened
2 eggs
1 tablespoon vanilla
1 1/2 cups chopped pecans
2 1/2 cups crushed potato chips (we usually use Lays)
3 1/2 cups oat flour


Preheat oven to 350°F.
Cream softened butter and sugar in a stand mixer. Add vanilla then gradually add in flour. Stir in nuts and chips.
Drop by the teaspoon onto nonstick cookie sheet and bake for 14 minutes. Let cool for 7 minutes.
