Make the dough. In a large bowl, add the pancake mix and slowly whisk in the milk until a dough forms. (You may not use all the milk, so add it slowly.) Pour dough onto a floured counter and roll into a rectangle about 1/8-inch thin. Brush the top with butter.
Fill, roll and cut. In a food processor, pulse the pumpkin spice, sugar, bacon, and orange zest until combined. Spread mixture on the buttered dough then sprinkle the pecans evenly over the top. Roll the dough and cut 12 even pieces.
