For the Grapefruit Simple Syrup:
1 cup sugar
1 cup water
2 2-inch pieces grapefruit rind
1 jalapeño, sliced in half
1 1/2 ounces Mezcal
1 ounce grapefruit juice
1 ounce grapefruit simple syrup
1/2 ounce orange liqueur
Salt, for the rim (optional)
Lime slices, for garnish

To make the simple syrup, place ingredients into a saucepot and bring to a boil. Once at a boil, turn off the heat, remove the grapefruit rinds and jalapeño and let cool.

Run a lime wedge around the edge of a glass then dip it in salt to salt the rim. Fill the glass with ice and set aside.

Fill a cocktail shaker with ice. Add the mezcal, grapefruit juice, grapefruit simple syrup and orange liqueur. Shake for 30 seconds then pour over ice and garnish with a lime wedge.
