B-O-T-J Chilaquiles

Serves 2

1/4 jar tomato sauce (about 6 ounces)
2 spicy pork meatballs, broken up (or any leftover meat or veggies you have lying around)
3 eggs
2 handfuls broken tortilla chips


Heat the sauce in 10-inch nonstick sauté pan over a medium-high flame. Add the eggs, meat and chips to the pan and cook, stirring constantly until the eggs set, about 3 minutes. Transfer to a plate and garnish with sour cream, salsa, hot sauce and cilantro.
