BOTJ Raspberry Rhubarb Fizz

Serves 1 cocktail

Raspberry jam or preserves from the bottom of a jar (about 1/2 ounce)
2 fresh mint leaves
2 pieces rhubarb
1/2 ounce lemon juice
1 ounce gin
Rhubarb stalks, for garnish


Muddle jam, min and rhubarb in a shaker then add lemon juice and gin. Shake it up, pour into glasses and top with seltzer. Garnish with a stalk of rhubarb.
