Cucumber-Mint Sparkling Lemonade

Serves 2

1/2 cup English cucumber, sliced
1 lemon, rind and pith removed
3 to 4 mint sprigs
2 tablespoons maple syrup
1 to 1 1/2 cups seltzer water or club soda


Add cucumber, lemon, mint sprigs, maple syrup and 2 tablespoons of water to a blender and blend until puréed. Strain into 2 tall glasses, add about 1/2 cup of ice to each glass and top each drink with seltzer.
