Pineapple-Mint Soda

Serves 1

1/4 cup fresh pineapple, cut into small chunks
2 to 3 mint leaves, plus 1 whole mint sprig, for garnish
1 teaspoon honey
1/2 to 3/4 cup seltzer or club soda


In a tall glass, muddle pineapple with the mint leaves and honey using a muddler or the back of a wooden spoon. Add about 1/2 cup of ice and stir to combine. Garnish with a mint sprig.
