Szechuan Fries

1 tablespoon Szechuan peppercorns
1 1/2 teaspoons red pepper flakes
1 teaspoon dried garlic flakes
1 teaspoon salt
3/4 cup mayonnaise
1 tablespoon sesame oil
1 bag frozen French fries
Place the Szechuan peppercorns, dried garlic flakes and red pepper flakes into a spice grinder and grind into a powder; set aside.
In a small bowl, combine mayo and sesame oil.
Bake or fry French fries according to package directions until golden brown.
While the fries are still hot, place them into a large brown paper bag or a bowl. Dump the spice mixture on the fries and shake or toss to coat.
Place the fries on a serving platter and serve with sesame-mayo alongside for dipping.
