Royal Icing

Serves Around 2 cups

3 tablespoons egg white meringue powder
1 1-pound box (4 cups) confectioner’s sugar
4 to 6 tablespoons water
1 1/2 teaspoons vanilla
1 1/2 teaspoons lemon juice


In the bowl of a stand mixer, beat the egg white powder, confectioner’s sugar, 4 tablespoons water, the vanilla and lemon juice with the wire whisk attachment on medium high until it forms peaks, around 5-7 minutes. If it is too stiff, add some more water to loosen.
