Cucumber-Feta Greek Yogurt Dip

Serves 4 to 6 servings

 2 cups (16 ounces) plain low-fat Greek yogurt
1 cucumber peeled, seeded and finely chopped
8 ounces crumbled feta
2 minced garlic cloves
2 tablespoons fresh dill, finely chopped
2 tablespoons scallions, finely chopped
1 tablespoon fresh lemon juice

Fresh veggies, such as carrot sticks, celery, etc., to dip


In a bowl, combine ingredients well and toss in the fridge for at least an hour for the flavors to marry. Serve it chilled with fresh veggie dippers alongside.
