All the comforting flavors of the classic soup in an appetizer.


For Caramelized Onions:
¼ cup olive oil
3 large Spanish onions, peeled, cored, sliced
½ teaspoon kosher salt

For Crostini:

1 teaspoon thyme leaves
½ cup beef stock
¼ cup sherry
1 baguette, sliced into crostini and toasted.
½ cup shredded gruyere cheese
