Ingredients

For the beef and marinade:
  • 1½ pounds flank steak
  • Ground white or black pepper, to taste
  • 1 tablespoon neutral oil
  • 2 tablespoons light soy sauce 
  • 1 tablespoon cornstarch
For the sauce:
  • ¼ cup Shaoxing rice wine or dry sherry 
  • 2 tablespoons light soy
  • 2 tablespoons dark soy sauce
  • 2 tablespoons cornstarch dissolved in splash of water 
  • 1 tablespoon sugar
  • 2 tablespoons dark sesame oil 
  • 1 teaspoon Chinese 5-Spice  powder
For the broccoli and to prepare:
  • 1 large head broccoli or 3 bunches broccolini, trimmed and cut into bite-sized pieces (stem) and small florets
  • 3 tablespoons peanut or other neutral oil
  • 4 cloves garlic, thinly sliced or chopped 
  • 2 inches ginger root, peeled and chopped
  • 1 leek, trimmed, split lengthwise and wash grit away, then slice on bias whites and light to  medium greens of top
  • Toasted sesame seeds, to garnish
  • Rice or Chinese rice noodles, to serve

Preparation

For the beef and marinade, halve the flank steak down the center and thinly slice on bias against the grain. Combine with marinade in plastic bag and let stand 20 minutes.  

For the sauce, whisk up all ingredients in medium bowl and re-whisk when ready to use. 

For the broccoli, place ½ cup water in a skillet that has a lid. Boil. Add broccoli, cover 1 minute, uncover and let water evaporate, then transfer to a platter or bowl.   

To prepare, heat 1 tablespoon oil, 1 turn of pan, in large nonstick skillet over medium-high to high heat. In batches, add beef in a single layer and brown 1 minute, flip and brown again, then remove and repeat. Remove pan from heat for a minute and reduce heat a bit. Add more oil to lightly coat the pan, add garlic, ginger and leek and stir 2 minutes, add sauce, beef and broccoli and combine, toss 2 minutes. Garnish with sesame seeds and serve with rice or Chinese rice noodles.
